Cheese Topping:

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat a large Dutch oven over medium-high heat and brown ground beef and italian sausage until completely crumbled and no pink remains, approximately 8-10 minutes.
  2. Add diced onions and minced garlic to the meat mixture, sautéing until onions become translucent and fragrant, about 3-4 minutes.
  3. Pour in chicken broth, beef broth, crushed tomatoes, tomato sauce, and tomato paste, stirring to combine all ingredients thoroughly.
  4. Season the soup with dried basil, oregano, salt, and black pepper, then bring the mixture to a rolling boil.
  5. Reduce heat to medium-low and simmer the soup uncovered for 15-20 minutes, allowing flavors to meld and develop.
  6. Break lasagna noodles into bite-sized pieces and add directly into the simmering soup, cooking until pasta is tender and al dente, approximately 8-10 minutes.
  7. While soup is cooking, prepare the cheese topping by mixing ricotta, mozzarella, and parmesan cheeses with chopped parsley in a separate bowl.
