Ingredients
Scale
Proteins:
- 12 ounces (340 grams) smoked sausage, sliced
Vegetables and Aromatics:
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 green onions, chopped
Main Ingredients:
- 1 tablespoon olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can (14.5 ounces / 411 grams) diced tomatoes, undrained
Seasonings:
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Sear sliced sausage in a large skillet over medium heat until golden brown, approximately 3-4 minutes. Transfer to a separate plate.
- Using the same skillet, sauté chopped onions and bell peppers until they become translucent and tender, around 3 minutes. Add minced garlic and cook for an additional 30 seconds.
- Introduce rice to the skillet, stirring continuously to lightly toast the grains for 1-2 minutes.
- Create a flavor base by combining chicken broth, diced tomatoes, Cajun seasoning, smoked paprika, thyme, black pepper, salt, and red pepper flakes. Mix thoroughly.
- Reintegrate the browned sausage into the skillet, allowing the mixture to reach a boil. Immediately reduce heat to low, cover, and let simmer for 18-20 minutes until rice becomes completely tender.
- After cooking, remove from heat and allow the dish to rest for 5 minutes, enabling the flavors to meld and rice to absorb remaining liquid.
- Fluff the rice gently with a fork to separate the grains and create a light texture. Garnish with freshly chopped green onions before serving.
Notes
- Swap proteins easily by using chicken, shrimp, or plant-based sausage for dietary flexibility.
- Toast rice beforehand to enhance nutty flavors and prevent clumping during cooking.
- Use low-sodium chicken broth to control salt levels and accommodate heart-healthy diets.
- Adjust Cajun seasoning intensity by reducing or increasing spice quantities for personal heat preference.
