Ingredients

Scale

Main Ingredients:

  • 16.3 ounces (462 grams) Pillsbury Grands Southern Biscuits, halved horizontally
  • 3/4 cup (180 milliliters) pumpkin puree
  • 1 large egg

Spices and Sweeteners:

  • 1/4 cup (60 milliliters) Cinnamon Toast Crunch Cinnadust
  • 1/4 cup (50 grams) brown sugar
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup (100 grams) granulated sugar
  • 1 1/2 teaspoons ground cinnamon

Frosting Ingredients:

  • 4 ounces (113 grams) cream cheese, softened
  • 1/2 cup (60 grams) powdered sugar
  • 1/4 cup (60 milliliters) maple syrup
  • 1/2 teaspoon pumpkin pie spice

Instructions

  1. Prepare the oven to 350°F and grease a 9″x5″ or 8″x4″ loaf pan with butter or non-stick spray.
  2. Whisk pumpkin puree, egg, brown sugar, vanilla, and pumpkin pie spice in a small bowl until thoroughly combined and silky.
  3. Carefully separate each biscuit into two thin layers by gently pulling them apart horizontally.
  4. Generously dust every biscuit layer with Cinnadust or homemade sugar-cinnamon mixture.
  5. Position the loaf pan at a slight angle for easier layering.
  6. Create alternating layers: first a cinnamon-coated biscuit, then a tablespoon of pumpkin mixture, repeating until the pan is filled.
  7. Transfer to the preheated oven and bake for 40-45 minutes until the top turns golden and the center feels firm.
  8. If the surface browns too quickly, loosely tent with aluminum foil to prevent burning.
  9. While baking, prepare the frosting by blending cream cheese, powdered sugar, maple syrup, vanilla, and pumpkin pie spice using a hand mixer until smooth and creamy.
  10. After the loaf has cooled slightly, spread the frosting evenly across the top.
  11. Serve either warm or at room temperature for optimal enjoyment.

Notes

  • Customize spice levels by adjusting pumpkin pie spice to personal taste preferences.
  • Ensure biscuits are room temperature for easier separation and more even layering.
  • Use low-fat cream cheese or Greek yogurt for a lighter frosting option.
  • Gluten-free biscuits can replace regular ones to make the recipe celiac-friendly.
