Ingredients
Scale
Protein:
- 500 g / 1.1 lb ground beef
- 200 g / 7 oz bacon, diced
Vegetables and Aromatics:
- 4 large onions, thinly sliced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
Seasoning and Liquid Ingredients:
- 2 tbsp tomato paste
- 250 ml / 1 cup beef broth
- 60 ml / 1/4 cup red wine
- 1 tbsp worcestershire sauce
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Preheat a large skillet or Dutch oven over medium-high heat, ensuring the cooking surface is evenly heated.
- Render the diced bacon until crispy and golden, allowing the fat to release and create a flavorful base, then transfer the bacon to a separate plate.
- In the same skillet, add olive oil and sauté the sliced onions on medium-low heat, stirring occasionally until they caramelize and turn a rich, deep golden brown, approximately 20-25 minutes.
- Incorporate minced garlic, diced carrot, and celery into the caramelized onions, cooking for an additional 3-4 minutes until the vegetables soften and become fragrant.
- Push the vegetable mixture to the side of the skillet and add ground beef, breaking it into small crumbles and browning until no pink remains, about 5-6 minutes.
- Sprinkle flour over the meat and vegetables, stirring to coat and create a light roux that will help thicken the sauce.
- Pour in red wine, beef broth, and Worcestershire sauce, scraping the bottom of the pan to release any browned bits.
- Add tomato paste, dried thyme, bay leaf, salt, and black pepper, stirring to combine all ingredients thoroughly.
- Reduce heat to low, cover the skillet, and simmer the mince for 25-30 minutes, allowing the flavors to meld and the sauce to reduce and thicken.
- Remove the bay leaf, return the crispy bacon to the skillet, and give the mixture a final stir before serving hot.
Notes
- Layer flavors by slowly caramelizing onions, which develops a deep, sweet, complex taste that transforms the entire dish’s profile.
- Create extra crispy bacon by rendering it first, allowing fat to render completely and providing a crunchy texture contrast to the tender mince.
- Enhance umami depth by deglazing pan with red wine, which captures all the delicious browned bits stuck to the cooking surface.
- Customize recipe for different dietary needs by substituting ground beef with plant-based alternatives or using turkey for a leaner protein option.
